Ingredients:
- 3-4 medium-sized sweet potatoes
- 1/4 cup of tahini
- 2 tbsp of lemon juice
- 2 small cloves of garlic minced
- 1/2 tsp of sea salt
- 1.5 tsp of coconut sugar
- 1 scoop of greens original
- 1 tbsp of olive oil
- 1/3 of soaked cashews
- red cabbage
- microgreen sprouts
- roasted chickpeas
- watermelon radish
- sautéed kale
- green onions
Directions:
- Preheat the oven to 400 F. Wash and scrub the sweet potatoes, and prick a few holes in each with a fork. Line them up on a baking sheet and bake in the oven for 30-45 minutes, or until tender. They are finished when a knife can easily be pierced in the center.
- While the sweet potatoes are baking in the oven, place all of the creamy garlic-tahini dressing ingredients into a blender and blend until fully mixed. If the dressing it too thick, add 1 tbsp of water at a time until desired consistency is achieved.
- Once the sauce is made, prep your toppings and get your sweet potato ready for dressing! Place all of your favorite prepped vegetables on top of the sweet potato and drizzle the creamy garlic-tahini sauce on top. Enjoy immediately.
- If you have leftovers, keep everything separate until you are ready to eat. The sauce will keep in a tightly sealed container for 3-4 days.
